The Worlds Finest BBQ Pork Ribs

Ingredients
- 5-6 pounds fresh baby back pork ribs
- 2 large onions, sliced
- 8 cloves of garlic, whole
- 3 cups of red wine
- ½ kg wild flower honey
- 4 tblsp Dijon mustard
- tied herb bouquet of rosemary, sage, thyme and bay leaf
- 1 100mL can of tomato paste
- 2 400mL cans of diced tomatoes
- 3 tsp of sea salt
- 2 tsp fresh cracked black pepper
- 1/3 cup brown sugar
- 3 tblsp black molasses
- 1 chopped whole chipotle pepper (more if you prefer)
Directions
- season the ribs liberally with salt and pepper, place in appropriate sized oven proof cooking vessel
- add onions, herbs and garlic cloves
- combine all other ingredients and add to ribs
- if necessary, add cold water to cover the ribs
- cover with foil or lid
- Place the ribs in liquid into a pre heated 325 degree oven and slow cook for about 3 hours, or until the bone a loose and meat is very tender
- Remove from oven and take the ribs out of the cooking liquid (braisage) and let cool
- Place the braisage in a pot and boil vigorously on medium high heat to reduce to sauce consistency approximately 20-35 minutes, remove herb bouquet and strain through sieve, reserve sauce
- Mean while, pre heat charbroiler or BBq to medium heat
- Gently place the ribs on the BBq and grill gently on both sides for 3-4 minutes
- Begin basting with reduce braisage (sauce) and allow the flavours to caramelize
- Turn the ribs several times and baste regularly until well coated with sauce
- Serve immediately
