Tomato, Cucumber & Mozzarella Salad

Ingredients
- 1 pt fresh summer cherry tomatoes (or roma or any other type)
- ½ cup mozzarella pearls
- Sea salt and pepper
- 1 tblsp chopped fresh basil
- 1 small long English cucumber
- 1 head romaine lettuce (course outer leaves removed)
- 1 lemon juiced
- 2 tblsp extra virgin olive oil
- 1 tblsp white wine vinegar
- ¼ cup snipped fresh chives
Directions
- Halve the cherry tomatoes (or chop whole larger tomatoes into bite size pieces)
- Remove the mozzarella pearls from their brine and toss with a little sea salt and pepper
- Slice the cucumber into rounds on a bit of a bias
- Slice the romaine lettuce across the leaves about ¼ inch thick
- Combine all of the ingredients into a large bowl and toss to incorporate flavours
- Season with sea salt and cracked black pepper to taste
