Ingredients

  • 1 ½ to 2 lbs small Yukon potatoes (cooked until done, but not mushy)
  • 2 tblsp sour cream
  • 2 tblsp olive oil
  • 1 tblsp Dijon mustard
  • 1 tblsp prepared mustard
  • Sea salt and black pepper
  • 1 large or 2 small Roasted red peppers
  • 2 tblsp chopped chives
  • 2 tblsp chopped parsley
  • 3 tblsp crumbled feta cheese

Directions

  1. Cook the potatoes and drain from water
  2. Combine all other ingredients in a large bowl and stir using a rubber spatula
  3. Add still hot potatoes and toss gently to combine with sauce. Serve
