Warm Yukon Potato Salad

Ingredients
- 1 ½ to 2 lbs small Yukon potatoes (cooked until done, but not mushy)
- 2 tblsp sour cream
- 2 tblsp olive oil
- 1 tblsp Dijon mustard
- 1 tblsp prepared mustard
- Sea salt and black pepper
- 1 large or 2 small Roasted red peppers
- 2 tblsp chopped chives
- 2 tblsp chopped parsley
- 3 tblsp crumbled feta cheese
Directions
- Cook the potatoes and drain from water
- Combine all other ingredients in a large bowl and stir using a rubber spatula
- Add still hot potatoes and toss gently to combine with sauce. Serve
