Ingredients

  • 2 cups fresh shelled summer sweet peas (substitute frozen if necessary)
  • ¼ cup whole butter
  • 1 tsp sea salt
  • ½ tsp fresh cracked black pepper
  • 1 tsp each of fresh chopped: rosemary, sage, thyme, parsley, chives, basil, tarragon & mint
  • 2 tblsp dry white wine
  • 2 tblsp chicken stock or water

Directions

  1. In a medium sized heavy bottomed sauce pan, melt the butter over medium heat
  2. Add fresh chopped herbs and warm through to infuse flavours
  3. Add peas and toss to coat in herb butter, allow to cook for 1-2 minutes
  4. Add in stock & white wine toss to coat.
  5. Allow to reduce and cook peas through, approx. 2 minutes more
  6. Serve immediately
