The Nicest Herbed Summer Peas

Ingredients
- 2 cups fresh shelled summer sweet peas (substitute frozen if necessary)
- ¼ cup whole butter
- 1 tsp sea salt
- ½ tsp fresh cracked black pepper
- 1 tsp each of fresh chopped: rosemary, sage, thyme, parsley, chives, basil, tarragon & mint
- 2 tblsp dry white wine
- 2 tblsp chicken stock or water
Directions
- In a medium sized heavy bottomed sauce pan, melt the butter over medium heat
- Add fresh chopped herbs and warm through to infuse flavours
- Add peas and toss to coat in herb butter, allow to cook for 1-2 minutes
- Add in stock & white wine toss to coat.
- Allow to reduce and cook peas through, approx. 2 minutes more
- Serve immediately
