Twice Baked Duchess Potatoes

Ingredients
- 3-4 large russet potatoes, peeled, cooked and mashed smooth through a ricer or the like
- 1 cup grated aged white cheddar
- 1 tsp sea salt
- 1 tsp fresh cracked black pepper
- 1/3 cup finely chopped chives (or substitute green onions or parsley)
- 1 large or 2 small eggs
Directions
- Mash the cooked potatoes until as smooth as possible
- While still fairly hot, combine all the other ingredients into the potatoes and mix until evenly incorporated
- Using a piping bag with a large star tip, pipe into individual sized portions
- Bake at 375* for 15 minutes or until golden brown
