Ingredients

  • 3-4 large russet potatoes, peeled, cooked and mashed smooth through a ricer or the like
  • 1 cup grated aged white cheddar
  • 1 tsp sea salt
  • 1 tsp fresh cracked black pepper
  • 1/3 cup finely chopped chives (or substitute green onions or parsley)
  • 1 large or 2 small eggs

Directions

  • Mash the cooked potatoes until as smooth as possible
  • While still fairly hot, combine all the other ingredients into the potatoes and mix until evenly incorporated
  • Using a piping bag with a large star tip, pipe into individual sized portions
  • Bake at 375* for 15 minutes or until golden brown
